Our Prawns
Each harvest yields different sizes: Large, Extra Large and Jumbo.
Our products cost more because it costs more to do things the right way... However, our product has a ton of value beyond just your average shrimp tail!
Before you discard the heads and shells, consider:
Most flavor in animal protein comes from their fats. (Think of prized fat marbling in Wagyu beef, for example).
Most of the healthy fats in shrimp and reside in the "head" or body cavity, which is usually discarded.
As the "head" is cooked, an organ called the hepatopancreas ruptures and releases bittersweet lipids and flavor into the rest of the shell.
Since our prawns are guaranteed clean and fresh, you can trust that fat-soluble pollutants, heavy metals and antibiotics are not a concern.
We encourage you to cook with whole prawns, or if removing the heads, that you use them to make a stock!
